Chicken Fried Rice


I'm all about an easy weeknight meal,that my husband, one-year old and myself can all enjoy. This chicken fried rice tastes better than take out and is sure to please even the pickiest eaters 

Ingredients

- 2 boneless chicken breast 
- 1 cup jasmine rice, uncooked
- 1 or 2 eggs
- 1 cup frozen carrots & peas 
- 1tbsp butter
- 2 tbsp vegetable oil
- 3 tbsp soy sauce 
- salt and pepper to taste

Directions 

First poach chicken for 15 mins, remove and cut into small cube size pieces, set aside.

Cook rice according to package. Once rice is cooked set aside. Cook frozen carrots and peas. In a separate bowl beat egg. In large skillet add butter, once melted add egg, cook flat and break into pieces. Add rice, oil, chicken, cooked vegetables, soy sauce, salt & pepper to skillet cook for 5 - 10 mins allowing rice to a bit of a golden crisp. Serve & enjoy.
